We've given the Omnium Radio presenters a challenge to feed at least a family of 4 for the budget of £5.00.
I thought that I would start and have found that although you can't really buy fresh for £5.00 you can make a meal for a family.
I decided to go with Chili & Rice.
At Aldi I was able to buy:
Tin of Tomatoes
Tin of kidney beans
Tin of Taco Mixed Beans
Tin of Stewed Steak
Bag of Long Grain Rice
And Mixed Peppers.
For £4.58
How did I turn this into a Chili and Rice?
I started with using only 2 peppers from the bag (leaving one pepper to use for a future meal) and diced them up and added them in to a saucepan with a little drizzle of oil, then frying them for a few minutes on high heat.
2. Added the tin of chopped tomatoes and stired until simmering
3. Added the tin of kidney beans and the tin of taco Mixed Beans.
You can also add chili powder and herbs if you have any.
Stir this mixture until simmering
4. Then add the tin of Stewed steak and bring down to medium heat and allow to simmer whilst continuing to stir the mixture.
5. Grab a saucepan of water and bring to the boil, then add one cup of rice per 2 people.
6. Once the water is boiling allow to simmer until the rice is cooked stirring occasionally to avoid sticking.
You should now notice that the chili has began to thicken up, lower the heat to low and continue to stir.
7. Once rice has cooked, remove excess water using a collider. Then add the portions of rice to the plates, and top with the portions of chili.
You may find that you have extra chili left over if you are small eaters or there is only 2-3 in your family. Allow the extra portions to cool and then place in a freezable container, pop in the freezer to reheat and enjoy again sometime in the future.
All this took less that 30 minutes to prepare and cook and for just £4.58 with 3/4 of the bag of rice and a pepper unused to be used on another meal and also having spare portions of chili to freeze and eat in the future.
It's a must do meal on a budget!
